Banana Curry Recipe
Very easy, quite cheap, and relatively quick, I used to make this on a regular basis about ten years ago, might sound a little bit unusual but always warmly received. A few different people have asked me for the recipe, but never got around to writing it up before. Easily modified, this is just the most basic version, I prefer more spices, but some people get put off.
Ingredients for 2 people
- 2 onions, chopped
- 4 cloves Garlic, chopped
- 1 large cup marrowfat peas, soaked
- half block creamed coconut
- 2 bananas, chopped
- 1 chilli, chopped
- 1 tablespoon tumeric
- 2 tablespoon garam masala
- 1 tablespoon mustard seed
- some coriander leaves, chopped
Method saucepan and frying pan
- Cover marrowfat peas in water, bring to boil, add garam masala, tumeric and mustard seeds, then simmer until mush.
- Fry onions, add garlic, chilli and coriander.
- Mix both together adding bananas and coconut, cover and warm through.
- Serve with flatbread and/or rice.
